Chocolate Covered Strawberries


Need:
-Wax paper
-Strawberries
-Wilton Dark Chocolate Melts and Orange Melts
-Mini Chocolate Chips
-Warmer for Chocolate Melts

I made these tonight for my partner and grandmother and daughter. I used Wilton Dark Chocolate in my candy melter. I washed the strawberries, dried them and waited to get to room temp. After that, I warmed up the chocolate.
My daughter wanted to use the mini chocolate chips even though they were for my mint cake I am making this week ha-ha. I dip big to small strawberries so I know I getting enough chocolate for every height as the chocolate decreases.
I slightly scrape the bottom side and then dipped the strawberries in chocolate chips. Placed on a wax paper. Towards the end the small ones I drizzled with Wilton Orange White-chocolate. Those are devine! I use a piping bag to drizzle. Place about 8 melts into a bowl. Stir every 30 seconds til melted. Pour into bag. Cut a small hole and drizzle away.

Chicken and Lime Soup

 *I found this recipe on Pinterest and as always I do my twist to it.*

Ingredients:
-2 Tablespoons Olive Oil
-1/2 bunch Green Onion, chopped
-A bunch of Cilantro, chopped
-1 Celery stalk, sliced
-1 Tablespoon Garlic, minced garlic I used
-3 small Jalapenos or 1 big, seeds and all sliced/diced
-3.5 lbs. Boneless Skinless Chicken Breasts
-1 Normal size can Petite Diced Tomatoes 
-2 Small cans Green Chilies
-7 cups Water
-6 Chicken Bullion Cubes
-Tablespoon Italian Seasoning
-Dash of Salt
-3 Limes (More if you want to garnish)
-1 1/2 Cup Noodles, I used Shells (optional- I added into the bowls or can cook in the crock pot if everyone wants it.)

Steps:
1. Add the Olive Oil to a Large Crock Pot, set on high.
2. Chop up the ingredients
3. Cut the Chicken and cook in a pan, don't drain!
4. Add Green Onion, Cilantro, Garlic, Celery, and Jalapenos into the Crock Pot. Let the flavors mix for a couple minutes. Stir.
5. Add the Chicken and chicken juices, Water, Petite Diced Tomatoes, Green Chilies, Cubes, Salt, and Italian seasoning. Stir.
6. Cut one Lime open. Squeeze into Pot. Squeeze others every half hour.  Cook for about 2 hrs on Medium.

Acorn Bites



I say not bad for my first time making them. Definitely fun to make. Here is what I did...

Makes about 60 if you don't eat your product while making them :)

Ingredients:
  • Nutter Butter Bites
  • Hershey Kisses
  • Wilton Chocolate Candy Melts
  • Mini Chocolate chips
You will also need that's not always in the household:
  • piping bag
  • cookie sheet paper

Steps:
  1. Place cookie sheet paper on the table.
  2. Undo all the Hershey Kisses. I bought the almond ones because I think it's a cute add since you will technically still be eating a nut.
  3. Cook about 20 chocolate melts in the microwave. Stir every 30 seconds til melted. Pour into a piping bag.
    1. Snip a small hole.
  4. Place Nutter Butter Bites on the cookie sheet paper. (Above)
  5. Take the piping bag and add a few drops of chocolate on the Nutter Butter Bite. Simply place the Kiss on top and move onto the next one. (Right)
  6. By the time you are done piping all those one the first few rows should already cooled off in the center.
  7. Next...You want to do the mini chocolate chips.
    1. Hold the acorn and make a small dab of melted chocolate on top. Then gently place the mini chocolate chip on top. Place down and go onto the next one. This part I suggest for adults to do if making them with kids. (Right)
  8. After that gently place them in a container or gift bags and you are good to go :)

Cinnamon ornaments

Cinnamon Ornaments


Cinnamon Ornaments can be soo much fun with the little ones :) Here's how to make them!

Ingredients: 
  • 4 oz. of cinnamon (cheaper at the dollar store)
  • 1.5 tbsp ground cloves
  • 1.5 tbsp ground nutmeg
  • 3/4 cups apple sauce
  • 3-5 tablespoons white glue
Also need:
  • rolling pin
  • cookie cutters
  • string or twine for hanging
  • skewer



Steps:
  1. Combine all the ingredients. It'll be sticky but keep mixing. You don't want it to be crumby. Once it's at a perfect consistency, then you can take portions at a time to roll out the cinnamon dough.
  2. Roll to about 1/4" high, not too thin but not too thick either. Once you roll out the portion you may press the cookie cutter in. Take a skewer to make a hole. Poke through the front(take skewer out), then gently lift and take the skewer to poke the back end too a little.
  3. Leave on the pan for three days. You will see the back dry to judge how dry it is and still moist if not ready. By day two I use the t-shirt paint to make the little gingerbread men for my potpourri dish I plan on making. 
  4. To get the smell really into the house I add more cloves and nutmeg but the more you add a but more glue to add to the mix.
  5. Have fun!



Taco Chicken Chili



Taco Chicken Chili



I've made this twice in the last month. It tastes soooo good. I am not a chili lover but there's really nothing chili about it much. Follow these steps:
Servings: 10

Ingredients:
  • 1- Bunch of green onion
  • 1- Bunch of Cilantro
  • 2- 16 oz  can kidney beans (drained)
  • 1- 8 oz tomato pasta sauce
  • 1- 10- 15 oz can of corn(drained)
  • 1- Packet of chicken taco seasoning
  • 2- 14.5 oz of diced tomatoes with chilies
  • 1- Tbsp cumin
  • 1-Tbsp of chili powder
  • About 3 boneless skinless chicken breast.
Steps:
  1. Cut the green onion and cilantro and place in the crock pot, set on low.
  2. Add the corn, beans, chilies, tomato sauce, chicken seasoning, cumin, and chili powder.
  3. Stir to combine all the flavors.
  4. Place the chicken on top of ingredients. Three hours on medium or until chicken is thoroughly cooked. You can take out and shred then place back in. 
  5. Give chili another two hours or until tender to your taste buds. To get the job done quicker. I shredded the chicken and cooked it on a pan. Then dumped the chicken with it's juices into the crock pot for three hours on medium-high.
  6. I bought Frito Scoops too and so yummy with cheese melted on top. Enjoy!

Hamburger Wraps


I made hamburger wraps! I saw this idea from a pinner on Pinterest, thought I'd give it a shot. 

I bought:

  • 1 package of egg roll wraps
  • 2 lbs ground beef
  • 1 bag of shredded cheese (your choice)

 Optional:

  • bacon bits
  • onions
  • tomatoes
  • etc...
Steps:

  1. Cook and drain ground beef. If you have bacon cook and cut bacon. Set aside.
  2. Dice veggies. 
  3. Combine ingredients into bowl. Add cheese into bowl.
  4. Pour oil into pan set on low.
  5. Open egg roll wraps, fill a cup of water.
    1. Place a wrap down on the table
    2. Wet corners of wrap
    3. Form a small mound on wrap and fold from the corner near you to center. Stop and fold in the left and right corner. Keep tight but not loose. Once you reached the end dab a smidgen of water on your end to help glue down the wrap better.
    4. Place in pan. Cook evenly til golden brown.
    5. Set on plate. Add a dash of salt if desired. 
    6. Enjoy with your condiments as desired!

PUMPKIN POP'EMS



These were fun to make. I saw an idea about pumpkin cinnamon rolls and decided to them in a monkey bread muffin form instead.

Ingredients:
  • 8 oz cream cheese
  • 1 table spoon ground cinnamon
  • 15 oz. can of pumpkin
  • 4 cans of regular biscuits
  • 1/4 cup brown sugar\
  • Optional: 
    • chocolate chips
    •  white chocolate chips
    • drizzle over the pop'ems 
    • nuts 
    • etc...
Steps:
  1. Turn oven on to 350*
  2. Combine cream cheese, cinnamon, pumpkin, and brown sugar with a mixer until smooth
  3. Cut biscuits up in to pieces and combine into a mixing bowl with the pumpkin mix
  4. Add a decent amount of the gooey goodness into un-greased mini cupcake pan.
  5. Cook for about 8 mins. Just before golden brown otherwise it'll get to hard and not stay soft on the inside. You can take one at in between baking to check on them for your preference.
  6. Take out of oven and place on a place on wax/cookie paper.
  7. Drizzle glaze or chocolate melts over. Up to you at this point. I am adding chocolate chips in mine next for now I garnished brown sugar on top before it baked in the oven and then drizzled white chocolate over it.Enjoy!

Peaches and cream pancakes


Peaches N' Cream Pancakes

I made pancakes to make four pancakes with about a tablespoon of cinnamon. I wanted to used fresh peaches but I wanted to go through to dry food cabinet and start eating what was in there. Which means I used canned peaches. It had light syrup in it. I diced those up, about three. Dabbed them off a cloth to they do not soak through the pancakes when cooking.

 I made the pancakes and added the peaches on top of the pancake batter in the pan. As they finished cooking I shingled them on a plate. 
~
Once complete, I used La Lechera cream across the pancakes. with a small garnish of light brown sugar with peaches on the side. Next time I am going to grill the peaches for the side. Be so yummy!
